Peanut Butter Oat Bites Visual Recipe

Do you feel like you’re always on the hunt for easy, nutritious, and tasty snacks for you or your kids? These peanut butter oat bites are super easy to make and only take a few minutes to whip up. Reminiscent of a Reese’s peanut butter cup, these oat bites combine the flavors of peanut butter and chocolate to make the perfect sweet bite. Also versatile, this recipe can be made using so many combinations, making it easy to adapt to any allergies or intolerances—swap out the peanut butter for your favorite nut butter or nut-free spread or add dried fruit instead of (or in addition to) chocolate chips. The addition of the oats rounds out these bites to provide a source of whole grains and B-vitamins. The recipe can be made ahead of time and the oat bites store well up either at room temperature or in the refrigerator for up to 2 weeks!

How to Make Peanut Butter Oat Bites:

You’re going to want to start by getting all your ingredients prepped and ready. First, measure 2 cups of oats and add them to a large mixing bowl.

 
 

Then, measure 1/2 cup of chocolate chips or other mix-ins you may be using. Add to the same mixing bowl. Other mix-in options could be dried cranberries, raisins, white chocolate chips, shredded coconut, or nuts. If using multiple mix-ins, make sure the total amount adds up to the 1/2 cup.

 
 

Using a spoon, scoop peanut butter into a 1/2 cup measuring cup, making sure there are no air pockets in the measuring cup. Add the measured peanut butter to the bowl. Tip: To make it easier to spoon your peanut butter from the measuring cup to the bowl, spray your measuring cup with nonstick cooking spray first.

 
 

Next, measure out 1/2 cup of honey, and add to the same bowl.

 
 


Measure 1/2 teaspoon of vanilla extract and add to the bowl.

 
 

Using a mixing spoon, mix all ingredients together until fully combined.

 
 

To make the balls, scoop about a tablespoon of the oat mixture.

 
 

Using your hands, roll the the mixture into balls, making sure they are tight and compact. Place formed balls onto a tray or plate. Repeat this until you have used the entire mixture.

 
 

Pack in a lunchbox for a school day or work day snack or munch on these peanut butter oat bites whenever you’re in the mood for something sweet!

 
 

Peanut Butter Oat Bites
Serves 6-8

Ingredients:

  • 2 cups oats

  • 1/2 cup mini chocolate chips (or other mix-ins)

  • 1/2 cup creamy peanut butter

  • 1/4 cup honey

  • 1 teaspoon vanilla extract

Directions:

  1. Add oats, chocolate chips, peanut butter, honey, and vanilla into a large mixing bowl.

  2. Using a spoon, mix all ingredients together until combined.

  3. Scooping a tablespoon of the mixture, form balls using your hands. Repeat until all of the mixture is used.

    *When forming the balls, if the mixture is very sticky and not fully packed, put the balls into the refrigerator for a little while to slightly firm. Then, roll in your hands again to tightly pack.
