Fried Rice Video

If you caught our Scrappy Cooking Class in August with Rethink, you know we are big supporters of repurposing all leftover food. Not only does it help you keep your home grocery budget down, but it will also reduce the amount of food we put in landfill, ultimately helping to take care of our planet. We put this fried rice recipe together as an example of what you can do to make a flavorful dish out of plain leftover rice. Plus, you can use almost any veggies and protein that you have around your kitchen as well, making it an easy weeknight dish to throw together with whatever’s on hand.

Fried Rice Recipe

Ingredients:

  • 1 tablespoon olive oil

  • 1-2 cups mixed chopped veggies (such as onions, carrots, peppers, peas, etc.)

  • 2-3 cups cooked rice

  • 1-2 cups cooked chicken (optional)

  • 2 eggs, beaten

  • 1 teaspoon sesame oil

  • 2-3 tablespoon soy sauce

  • 2 scallions, chopped

Directions:

  1. Heat a large skillet over medium heat. When hot, add the olive oil, followed by the mixed veggies. Cook veggies, mixing occasionally for 5-7 minutes until cooked through.

  2. Add the rice and water. Mix and cook for another minute or two.

  3. Add the chicken and mix.

  4. Push the rice mixture to one side of the pan and add the beaten eggs to the empty side of the pan. Mix the eggs around in the pan, cooking them like scrambled eggs. Once the eggs start cooking, mix integrate them with the rest of the rice mixture.

  5. Add the sesame oil and soy sauce. Mix until combined.

  6. Top with chopped scallions and serve. Enjoy!
