Overnight Oatmeal
We’re starting off 2021 with the perfect recipe for all of your New Year’s goals! These overnight oats check all the resolution boxes:
Eat healthy: Milk, oats, peanut butter, and maple syrup make up the base of this healthy breakfast. We recommend using skim dairy milk or a non-dairy milk. We also opted for all-natural peanut butter with no added sugar. Plus, enjoy a healthy serving of fruit with your choice of toppings.
Increase independence: The best part about this recipe is that there is no heat needed to cook it. The oats turn into oatmeal by sitting in the liquid mixture overnight rather than having to cook it on the stove or in the microwave. Beginner cooks or any age and ability can make this with minimal or no help.
Meal prep and save time: Take a few minutes the night before, add all your ingredients together, and store in the fridge overnight. This will be ready to eat in the morning. Making it in a mason jar or something similar means you can grab it on your way out the door and eat it at work or school.
Add flavor: This one’s simple. This is peanut butter and jelly in oatmeal form. It’s delicious.

PB& J Overnight Oatmeal Recipe
Ingredients:
1/2 cup milk
2 tablespoons peanut butter
1 tablespoons maple syrup
1/4 teaspoon vanilla extract
Pinch of salt
1/2 cup rolled oats
2 tablespoons peanuts
1 tablespoon blackberry, strawberry, or other jam
1/4 cup diced strawberries
Directions:
Add milk, peanut butter, maple syrup, vanilla, and salt to a mason jar or other container with a lid.
Mix well with a spoon.
Add the oats.
Mix again. Close mason jar and store in the fridge overnight.
Measure peanuts and store in container on the counter until morning.
Measure jam into a separate small container. Then dice your strawberries and add to the same container as the jam. Store in the fridge overnight.
In the morning, add the strawberries, jam, and peanuts to the mason jar of oatmeal.
