Black Bean Burger

Ingredients:

  • 2 cans (14.5 oz each) black beans, drained

  • 1⁄4 cup grated white onion

  • 1 clove garlic, minced

  • 1⁄4 cup chopped cilantro or parsley

  • 1 cup breadcrumbs

  • 1⁄2 teaspoon ground cumin

  • 1⁄2 teaspoon salt

  • 1 egg

  • Olive oil for frying

  • Hamburger buns, pita, or another bread

  • Burger toppings (cheese, ketchup, mustard, lettuce, pickles, etc.)

Directions:

  1. Drain and rinse the black beans cans. Transfer to mixing bowl and mash with a masher or fork until mostly mashed but still slightly chunky.

  2. Use a grater to grate an onion (need 1/4 cup grated). Add it to the bowl with the beans.

  3. Mince (chop very finely) 1 clove of garlic. Add it to the bowl with the beans.

  4. Chop 1/4 cup of either cilantro or parsley. Add it to the bowl with the beans.

  5. Also add the breadcrumbs, cumin, salt, and egg. Mix to combine.

  6. Put a skillet on the stove and turn on the burner to medium-low heat.

  7. Form the bean mixture into patties. It’s easiest to do this with your hands. You can either make 4 regular-sized burgers or about 10 mini sliders.

  8. When the pan is heated, add about 2 tbsp olive oil to the pan.

  9. Carefully place the patties in the skillet and cook them about 5 minutes on the first side. Use a spatula to flip and cook another 5 minutes, or until the heated through. Do this in batches if they can’t all fit in the pan at the same time.

  10. Serve on buns with toppings.

NOTE: The onion, garlic, cilantro, and egg can be combined/chopped in a food processor.
